Ingredients:
• 120 g Black beans
• 1 garlic clove
• 1 teaspoon cumin seeds
• 4 green peppers
• 4 yellow peppers
• 4 red peppers
• Apple cider vinegar
• Extra virgin olive oil
• Mint to taste
• Coarse salt to taste
• Dry Kombu to taste
• Pepper to taste
Method:
Cut half a yellow, red and green pepper into strips and then dice. Crush a small garlic clove with a pinch of coarse salt and a teaspoon of cumin seeds. Dilute the resulting paste in a spoon of sherry or apple cider vinegar and 5 spoons of extra virgin olive oil. Add the peppers to the condiment, along with a handful of mint leaves. Lastly, add the beans. Add pepper to taste and serve. This salad is also perfect for seasoning cold rice, turning it into an excellent one-course meal.
