Ingredients:
• 320 g Timilia wheat
• 100 g fresh cheese of your choice
• 250 g mozzarella
• 50 g salted ricotta (or any cheese of your choice)
• Cherry tomatoes
• Fresh basil to garnish
• 2 handfuls of capers in vinegar
• Salt to taste
• Extra virgin olive oil to taste
• Chili pepper and anchovy fillets are optional
Method:
Dice the mozzarella and pepato (a mild sheep’s milk cheese), grate the salted ricotta. Wash and cut the cherry tomatoes in half. Wash and coarsely chop the basil, wring out the capers. Place the Timilia wheat in a serving bowl, season with salt and oil, add all the other ingredients and stir thoroughly. The salad is ready!
