Ingredients:
• Pretzel type bread
For the bean burgers:
• 350 g black beans
• ½ egg
• 1 garlic clove
• 1 bay leaf
• ½ shallot
• Breadcrumbs
• Salt to taste
• Pepper to taste
For the filling:
• 130g cream of red cabbage and white kidney beans
• 1 chili pepper
• ½ red onion
• Extra virgin olive oil
• A few spoons of stracciatella cheese
• Red sauerkraut to taste
• Home-made mayonnaise
Method:
For the burger slice the shallots, brown in a little oil then add the beans. Puree to obtain a dense cream. Season with salt and pepper, add the beaten egg and a few spoons of breadcrumbs. Make two burgers and coat them in the bread.
Cut up the onion and sauerkraut.
Cook the burgers for a few minutes on a non-stick pan and assemble the buns, adding the cream of red cabbage and white kidney beans, the sauerkraut and stracciatella.
